A galette is a French pastry similar to a pie but much easier and quicker to make, in my opinion. It is a free-form pastry, so you don’t have to worry about getting a perfect crimp on your crust or lattice over the top.
Step 1
Gather your ingredients so you're ready to make the beautiful fancy open-faced apple pie.
Step 2
Make your pie crust and roll it out on a floured surface until circle is about 11 to 12 inches.
Step 3
Fold your rolled crust in half and then half again to transfer to a baking sheet lined with parchment paper.
Step 4
Slice peaches and place in a bowl. Spinkle in sugar, cornstarch and cinnamon then stir to coat.
Step 5
Pile peaches into the center of pie crust or arrange in a pretty pattern
Step 6
Fold the edges of the dough up around the edges of the peaches, overlapping the crust as needed.
Step 7
Crack egg into a small bowl and beat. Brush edges of pie crust with egg wash and sprinkle with raw sugar.
Step 8
Bake for 40 – 50 minutes or until the crust is golden brown. 1. Remove galette from the oven and place on a cooling rack.
TIP: Melt peach preserves for 10 – 20 seconds in the microwave. gently brush the peaches with peach preserves to lightly glaze.
