Directions for Cupcakes:

  • Preheat oven to 350 degrees. Spray or line a standard muffin tin.
  • Add cake mix to a large mixing bowl. Using a hand or stand mixer, mix in your lemon lime soda, oil, and eggs on medium until well incorporated.
  • Add batter into the muffin tin until each is about 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick comes out clean. Allow to cool completely before frosting.

Directions for Frosting:

  • In a large mixing bowl or stand mixer, cream the butter, and beat until light and fluffy, about 2 minutes.
  • Slowly mix in the powdered sugar, 1 cup at a time, while adding in half and half or milk, a bit at a time, in between each cup. Continue to mix for 1 minute or until creamy.
  • Evenly separate the frosting into 2 mixing bowls. In one bowl, add the lemon jello and yellow food coloring. In the other bow, add the lime jello and green food coloring.
  • Start with 1-2 drops of food coloring and continue with 1 drop until desired color is achieved.
  • Fill one of the small piping bags with the yellow frosting and the other smaller piping bag with the green frosting.
  • Slip the two smaller piping bags into the larger piping bag that has the piping tip. Squeeze out a bit of the frosting until it begins to swirl. Frost your cupcakes.
