This bacon cheeseburger casserole combines all the flavors of a classic bacon cheeseburger in an easy, cheesy baked pasta dish. Made with seasoned ground beef, crispy bacon, cheddar cheese, and a creamy egg mixture, this comforting casserole is perfect for busy weeknights, potlucks, or family dinners.
Preheat the oven to 375 degrees Fahrenheit. Lightly grease a 9 x 13-inch baking dish.
Heat a large skillet over medium heat. Add the ground beef and diced onion. Cook for 6 to 8 minutes, stirring occasionally, until the beef is browned and the onion is softened. Drain any excess grease.
Stir in the minced garlic, salt, black pepper, ketchup, and mustard. Cook for 1 minute, stirring frequently.
In a large mixing bowl, combine the cooked pasta, beef mixture, crumbled bacon, and ¾ cup of the shredded cheddar cheese. Stir until evenly combined.
In a separate medium bowl, whisk together the milk and eggs until smooth.
Pour the egg mixture over the pasta mixture and stir gently until everything is evenly coated.
Fold in the diced pickles and diced tomatoes, if using.
Transfer the mixture to the prepared baking dish and spread it into an even layer.
Sprinkle the remaining ¾ cup shredded cheddar cheese evenly over the top.
Bake for 25 to 30 minutes, or until the casserole is set and the cheese is melted and bubbly.
Let the casserole rest for 5 minutes before serving.
Garnish with additional diced tomatoes and pickles, if desired.
Notes
Let the Pasta Cool Slightly: If the pasta is piping hot, let it cool for a few minutes before mixing it with the egg mixture to prevent the eggs from scrambling.
Grease the Baking Dish Well: A light coating of cooking spray or butter makes serving and cleanup much easier.
Shred Your Own Cheddar: Block cheese melts smoother and gives the casserole a creamier texture than pre-shredded cheese.
Taste the Beef Mixture First: Before combining everything, taste the seasoned beef and adjust the salt or pepper if needed.
