These crispy bacon wrapped asparagus bundles are the perfect easy side dish — ready in just 40 minutes with simple ingredients you probably already have on hand.
Preheat your oven to 400°F. Line a baking sheet with parchment paper and place a wire rack on top. Setting the bundles on a rack is the key to getting evenly crispy bacon; it allows heat to circulate underneath so nothing ends up sitting in grease. Trim the woody ends off your asparagus and rub the spears all over with olive oil. Sprinkle evenly with salt, black pepper, garlic powder, and cayenne pepper. Make sure each spear is lightly coated for the best flavor in every bite.
Take a slice of regular bacon and wrap it around 3–4 asparagus spears, starting at one end and wrapping on a diagonal to the other. Place each bundle seam-side down on the wire rack. Repeat until all the spears are wrapped.
Bake for 25–30 minutes, or until the bacon is crispy and golden. If you want extra crispiness, switch the oven to broil on high for the last 2–3 minutes. Just keep a close eye on the bundles so they don't catch
Notes
Use regular-cut bacon, not thick-sliced. Thick bacon takes longer to cook and the asparagus will overcook before the bacon crisps up.
Pat your asparagus dry before oiling and seasoning. Any excess moisture can cause the bacon to steam rather than crisp.
Make your bundles with as many or as few spears as you like. If you have very thick asparagus, wrapping spears individually gives a better result.
For the crispiest bacon, don't skip the wire rack. It's the difference between limp bacon and beautifully crunchy strips.
Broiling at the end is optional but highly recommended for that restaurant-quality finish.
