These Cocoa Rice Krispie Treats put a chocolatey twist on the classic no-bake treat. Made with crispy rice cereal, gooey marshmallows, unsweetened cocoa powder, and optional mini chocolate chips, they’re soft, chewy, and packed with chocolate flavor. With just 10 minutes of prep, these easy treats are perfect for parties, lunchboxes, bake sales, or a quick dessert.
Line a 9 x 13-inch baking pan with parchment paper or lightly grease the pan.
Melt the butter in a large pot over low heat.
Add the mini marshmallows and cook over low heat, stirring continuously, until the marshmallows are completely melted and smooth.
Add the unsweetened cocoa powder and salt. Whisk or stir until the cocoa powder is completely incorporated into the melted marshmallow mixture.
Stir in the vanilla extract.
Remove the pot from the heat and immediately add the crispy rice cereal.
Gently fold the cereal into the chocolate marshmallow mixture until all of the cereal is evenly coated.
If using mini chocolate chips, allow the mixture to cool for about 2 minutes. Gently fold in the chocolate chips. Waiting briefly before adding them helps prevent the chocolate chips from completely melting.
Transfer the mixture to the prepared baking pan.
Using a buttered spatula or a piece of parchment paper, gently press the mixture into an even layer. Avoid packing the cereal mixture too firmly, which can make the finished treats hard.
Let the Cocoa Rice Krispie Treats cool and set at room temperature for about 30 minutes.
Lift the treats from the pan using the parchment paper and cut into 12 squares. Serve and enjoy.
