This crockpot swamp potatoes recipe gives you buttery baby potatoes, smoky sausage and green beans in a ranch-Cajun broth. The bayou-edge look gives it plenty of character.

Ingredients

baby potatoes

smoked sausage
sliced

(14.5-ounce) cans
whole green beans, drained

package
ranch seasoning mix
1
tablespoon
Cajun seasoning
1
cup
chicken broth

tablespoons
butter
Instructions
Cut the potatoes into halves or quarters and add to the slow cooker.
Add sliced sausage on top and sprinkle on Cajun seasoning and ranch seasoning.
Pour in the broth.
Cut the butter into pieces and add on top.
Cook on high for 3 to 4 hours or low for 6 to 8 hours.
One hour before the end of the cooking time, add the green beans to the crockpot.
Stir to combine and serve hot.
Notes
Sausage thickness:
Slice the smoked sausage into rounds about ½ inch thick so they mix through the potatoes easily.
Broth choice:
Use reduced-sodium chicken broth if your ranch packet or Cajun seasoning is salty.
Serving texture:
Stir gently before serving so the potatoes don’t break apart too much.
