Irish Inspired Ground Beef Stew is loaded with seasoned ground beef, potatoes, carrots and more all smothered in a thick and savory broth. This ground beef stew recipe is so simple to make and a total comfort food to enjoy all year round.
Line a baking sheet with parchment paper or a silicone baking mat
Chop potatoes into 1-2" pieces and place on the baking sheet. Drizzle with 2 Tablespoons of olive oil, toss to coat, and then season with salt and pepper.
Roast the potatoes for 25-30 minutes, turning halfway through, as you prepare the stew.
Place remaining oil in a stockpot or dutch oven over medium heat.
Once oil is hot, add the ground beef and season with salt and pepper.
Cook until ground beef is well-browned, about 4 minutes, then add the diced onions, carrots and celery.
Continue to cook until onions are translucent, about 4 more minutes.
Stir in the garlic and cook 1 minute, then stir in flour and thyme.
Cook while stirring frequently for 2 minutes to allow the flour to coat the veggies and meat and brown slightly.
Add the beef broth and Worcestershire sauce. Increase the heat to medium-high until stew comes to a boil.
Reduce heat to medium-low and continue to cook 10 minutes until stew is thick and veggies are as tender as you'd like.
Add the roasted potatoes to the stew once they are done roasting and then adjust stew seasoning.
