These lemon lime (7up) soda cupcakes are delicious with the perfect hint of citrus and sweetness! The soda makes the cake light and fluffy! Perfect for a sweet treat
Preheat oven to 350 degrees. Spray or line a standard muffin tin.
Add cake mix to a large mixing bowl. Using a hand or stand mixer, mix in your lemon lime soda, oil, and eggs on medium until well incorporated.
Add batter into the muffin tin until each is about 2/3 full.
Bake for 18-20 minutes, or until a toothpick comes out clean. Allow to cool completely before frosting.
Directions for Frosting:
In a large mixing bowl or stand mixer, cream the butter, and beat until light and fluffy, about 2 minutes.
Slowly mix in the powdered sugar, 1 cup at a time, while adding in half and half or milk, a bit at a time, in between each cup. Continue to mix for 1 minute or until creamy.
Evenly separate the frosting into 2 mixing bowls. In one bowl, add the lemon jello and yellow food coloring. In the other bow, add the lime jello and green food coloring.
Start with 1-2 drops of food coloring and continue with 1 drop until desired color is achieved.
Fill one of the small piping bags with the yellow frosting and the other smaller piping bag with the green frosting.
Slip the two smaller piping bags into the larger piping bag that has the piping tip. Squeeze out a bit of the frosting until it begins to swirl. Frost your cupcakes.
