Position the oven rack in the center position. Preheat the oven to 450°F.
Line a large, rimmed baking sheet with parchment paper and set it aside.
Crack eggs and separate the whites from the egg yolk, place whites in a large bowl. Use an egg separator if you have one. Reserve the yolks in another mixing bowl.* Season the egg whites with salt and pepper to taste.

Use a hand mixer or immersion blender to beat the egg whites until stiff peaks form, scraping the sides of the bowl with a rubber spatula to incorporate all of the egg whites.
Gently fold in ⅔ of the Asiago cheese and chives into the whipped egg whites, careful not to deflate them.
3 oz Asiago cheese, 3 T fresh chives
Spoon the whipped egg white mixture onto the prepared baking sheet in four piles, leaving plenty of space between each.
With the back of a spoon, create an indent in the center of each mound.
Place the baking sheet on the center rack of the preheated oven and bake for 3 minutes.
After 3 minutes, remove from the oven and carefully transfer reserved yolks into the indent of each mound.
Sprinkle each mound with half of the remaining cheese and fresh chives.
Return to the oven and bake for another 3 minutes or until the yolks are set and the egg whites are golden brown.
Remove egg clouds from the oven and sprinkle with the remaining cheese and chives before serving immediately.
Notes
*For best results, reserve the egg yolks in small, individual dishes instead of one larger bowl.
Be Gentle: When folding in cheese and chives into the egg whites, do so very gently to avoid deflating the mixture. This is what gives the cloud eggs their signature fluffiness.
Even Sizes: Try to make the whipped egg white piles on the baking sheet as even in size as possible. This ensures they cook uniformly and finish at the same time.
Room for Yolks: Make the indents in the center of each whipped egg white pile large enough to hold the yolk but small enough so it doesn't spread out too much.
Pre-crack Eggs: Cracking each egg into a separate small dish before adding the yolk to the cloud ensures that no broken yolks ruin the aesthetic of your dish.
Oven Watch: Keep a close eye on the eggs during the final minutes of baking to prevent overcooking the yolks if a runny center is desired.
