Halloween is just around the corner, and it's time to start thinking about some tasty treats to impress your friends and family at your spooktacular gathering!
Take the bamboo sticks or stainless steel skewers and thread three marshmallows onto each, ensuring they are grouped at one end.
Arrange the marshmallow skewers on a baking sheet and freeze them for 10 minutes. This step helps the chocolate coating adhere better.
While the marshmallows are chilling, melt the chocolate chips and shortening. You can use a double boiler over low heat or microwave them in 20-second increments until completely smooth.
Once the chocolate is melted, pour it into a tall glass. Remove the marshmallow skewers from the freezer and dip each skewer into the chocolate, coating the marshmallows thoroughly. Allow any excess chocolate to drip off before placing them back on the baking sheet.
Immediately add the candy eyeballs to the chocolate-covered marshmallows while the coating is wet.
Return the skewers to the freezer or refrigerator to allow the chocolate to set.
Using an electric mixer, combine the meringue powder and water in a large mixing bowl. Mix on medium speed until dissolved and slightly frothy. Gradually add half of the powdered sugar and mix until combined.
Add the vanilla extract, corn syrup, remaining icing sugar, and white food coloring, then mix on high speed until soft peaks form. Transfer the icing into a piping bag with a petal tip such as Wilton Tip #126.
Remove the chocolate-coated marshmallows from the freezer and pipe the white icing over them to resemble bandages. A little mess adds to the spooky effect.
Sprinkle the piped "bandages" with orange and black sugar sprinkles for an extra festive touch.
Once decorated, let the icing harden for 20-30 minutes before enjoying your delightful marshmallow mummy skewers.
Notes
Use Quality Chocolate: For the best flavor, select high quality chocolate chips or coating. Dark, milk, or white chocolate can all work beautifully.
Chill Before Dipping: Make sure the marshmallows are well-chilled before dipping to ensure the chocolate sets nicely and doesn’t melt too quickly.
Experiment with Toppings: Don't be afraid to mix and match sprinkles, nuts, or crushed cookies for different textures and flavors on your mummies.
Keep It Fun: Involve kids in decorating; it’s an excellent activity for motivating creativity!
Work in Batches: If you're making a lot of skewers, consider working in small batches to keep the process manageable and enjoyable.
