Rolo Pretzel Sandwiches are tasty bite-sized treats that are made with salty pretzels, sweet caramel Rolos. Then finished off with rich white chooclate and festive sprinkles. They are festive and fun!
Preheat the oven to 250 F and line a baking tray with parchment paper.
Place 40 pretzel snaps onto the prepared baking sheet in a single layer.
Top each pretzel with an unwrapped Rolo.
Place the pan in the oven and bake for 3-4 minutes, until the Rolos have softened but are not fully melted.
Remove from the oven and top each Rolo with another pretzel.
Gently push it down to flatten the Rolo.
Place the tray in the refrigerator and chill for about 20 minutes, until the chocolate hardens back up.
Melt the candy wafers in a bowl in the microwave on a low or defrost setting in 30 second increments, until smooth.
Stir in between each interval,
Remove the Rolo pretzel sandwiches from the refrigerator and dip each of the sandwiches halfway into the melted vanilla wafers.
Gently shake off any excess chocolate and then place the sandwich back onto the prepared baking sheet and immediately top with the sprinkles.
Once all the sandwiches are decorated then transfer the tray back into the refrigerator to chill for an additional 10-20 minutes, just until the outer coating completely sets.
Serve and enjoy!
Notes
You do not want the candy to melt completely in the oven, so watch them closely as oven cooking times can vary.
If you don't have room in your fridge for them to chill, they can cool down on the counter, they will just need about double the chill time.
Make sure that you work quickly with the sprinkles so that the chocolate doesn't harden before you add them.
