Instructions
Heat your oven to 350℉ degrees. Apply baking spray to a whoopie pie pan.
In a large bowl, mix these dry ingredients: flour, cocoa powder, baking soda, and salt.
1 ⅔ cups flour,
⅔ cup Hershey powder,
1 ½ tsp baking soda,
½ tsp Kosher salt
With an electric hand mixer, combine butter, shortening, and brown sugar in a medium bowl until smooth. Mix in egg and vanilla.
4 Tbsp sweet cream butter,
4 Tbsp vegetable shortening,
½ cup dark brown sugar,
1 large egg,
1 tsp pure vanilla extract
Gradually add the flour mixture and milk to the butter mixture.
1 cup whole milk
Put 1 ½ tbsp of whoopie pie batter into each whoopie pie cavity.
Bake for 10-12 minutes until the tops are springy. Let them cool on a wire rack.
Prepare Filling
Using a mixer, combine powdered sugar, butter, cocoa powder, and heavy whipping cream until it's smooth.
1 ½ cups powdered sugar,
½ cup sweet cream butter,
¼ cup hershey cocoa powder,
3 Tbsp heavy cream
Put the frosting into a piping bag.
Build the Whoopie Pies
Match similar-sized whoopie pies.
Pipe frosting on one half of each pair. Put a second cookie half on top, and press lightly.
Drizzle them with melted chocolate. Place a Godiva heart in the center.
1 cup melted semi sweet chocolate,
12 Chocolate Godiva hearts
Notes
I recommend using
baking spray
and not cooking spray for easy removal of your whoopie pies.
If you don’t have a whoopie pie pan you can also use a baking sheet with a small measured amount of batter spread apart.
When making your sandwiches try to match up the sizes as best as you can. This will help keep your edge pieces from breaking off once assembled.
