Start by preheating your oven to 350°F and grease your donut pan. Combine Fruity Pebbles and buttermilk in a large bowl and let sit.
Mix your dry ingredients in a medium bowl - flour, baking powder, and baking soda.
In a large mixing bowl, combine the cereal-buttermilk mixture with egg, oil, vanilla, yogurt, and melted butter. Mix at medium speed until well combined.
Add the flour mixture gradually, stirring until just combined. Don't overmix.
Fill your prepared pan about ¾ full. Use a pastry brush to ensure even coating of the pan.
For the Glaze:
While the donuts are cooling, mix together the powdered sugar, milk, vanilla extract, strawberry extract, and pink gel food dye until thoroughly combined.
Once donuts have cooled, gently remove them from the pan.
Dip the tops of each donut in the prepared glaze, then place them glaze-side up on parchment paper.
Immediately sprinkle crushed Fruity Pebbles in a diagonal direction across the corners of each donut before the glaze sets.
Notes
Let the cereal soak in buttermilk while preparing other ingredients
Tap the pan on the counter to remove air bubbles before baking
Don't overbake - the tops should spring back when lightly touched
Add the crushed cereal topping while the glaze is still wet
Use a piping bag for neater filling of the donut pan
