Pour ¾ cup water into the pot, add a steamer rack, and use the sauté function to boil.
Season the chicken breast evenly with Italian seasoning.
Once the water is boiling, place chicken breasts on the rack; stacking is fine.
Turn off sauté mode.
Add the pasta to a separate inner pot, drizzle with olive oil, cover with water to submerge the pasta, and then add an additional ¼ inch of water. Stir.
Put the pot with pasta over the chicken and cook on high pressure for 8 minutes.
After cooking, use the quick release method to vent.
Remove the pasta pot and stir in alfredo sauce.
Take out the chicken, chop it into chunks, and add to the pasta. Stir.
If desired, transfer to a baking dish and broil until the top is golden.
Notes
If you’re running really low on time, you can use leftovers of a rotisserie chicken to save on food waste!
Prevent Pasta Clumping: To prevent your fettuccine noodles from sticking together, add a tablespoon of butter to the pot along with the olive oil before cooking.
Enhance Flavor: To infuse the dish with a deeper garlic flavor, consider sautéing a few minced garlic cloves or add some garlic powder to the Instant Pot before adding the chicken.
For Thicker Sauce: If you prefer a thicker alfredo sauce, mix a teaspoon of cornstarch with a tablespoon of cold water and stir into the sauce after cooking.
Add Vegetables: After the pressure cooking is done, add steamed broccoli, sautéed mushrooms, or spinach to the mix to enhance its nutritional value and texture.
Adjust Creaminess: For an extra creamy texture, add a splash of heavy cream or half-and-half after stirring in the alfredo sauce.
A Touch of Freshness: To add color and freshness, garnish the top of the pasta with fresh parsley and grated Parmesan cheese before serving.
