Begin by preheating your oven to 400℉ and assembling your dry ingredients in a large mixing bowl.
In a large bowl begin by cutting in the cold butter with a pastry cutter until the mixture resembles coarse crumbs—a critical step for flaky scones.
Introduce the majority of your cheddar cheese, alongside portions of the crumbled bacon bits and chopped green onions, setting aside a small portion for later use as a garnish.
Following this, blend in the heavy cream and egg, working the ingredients together until you achieve a uniform dough.
Form your dough into a circular shape, aiming for a thickness of about 1" to 1 1/2". This will ensure your scones are perfectly risen and fluffy. Use a pizza cutter or sharp knife to divide the dough into 8 even sections.
Transfer these sections of scone dough onto a prepared baking sheet, allowing some space between each for expansion. Brush the tops of the scones with an additional layer of heavy cream and sprinkle the reserved cheese, bacon, and onions.
Follow the recommended baking time until the scones are beautifully golden and fragrant.
Once done, allow them to cool slightly before serving, to fully appreciate their buttery, flaky texture and rich, savory fillings.
Notes
Make sure that you are measuring the ingredients properly. Make sure to scoop the flour into the measuring cup and use a knife to level it off.
Use cold butter that is either grated or diced in cubes. The most important part is working the butter into the flour mixture.
You can garnish with extra cheese, bacon, and green onions. It will give a gorgeous look, but it is optional.
Don’t overbake the scones. Make sure to check on the scones, as if the scones cook too long they will be dry.
