Strawberry Chia Pudding
Fresh strawberries, chia seeds and vanilla make a creamy pink pudding with a mild berry flavor. It's a great make-ahead option for brunch or dessert.

chia seeds

vanilla extract

Instructions
Add the milk, strawberries, vanilla and maple syrup or honey if using to a blender. Blend until smooth.
Pour the mixture into a jar or bowl and stir in the chia seeds until evenly distributed.
Let it sit for 5 minutes then stir again.
Cover and chill until thickened, at least 2 hours.
When ready to serve, stir again and add whipped cream and/or fresh strawberries on top, if liked.
Notes
Taste before sweetening:
Strawberry sweetness varies, so taste the blended mixture before adding honey or maple syrup.
Adjust the thickness:
Stir in a small splash of milk if the refrigerated pudding is thicker than you like.
Add toppings later:
Keep whipped cream separate, if using, and add it when serving.
