It can be such a pain sometimes to have to research every time how long or what temperature it needs to be at before it’s done. So, I decided to make my own quick reference guide to keep with me when I grill. I wanted to offer it to you as well!

Types of Food to Grill
As clear as the name might sound and as adventurous as you might be with your grilling, you can put just about anything foodwise on the grill. However, there are a few basic types of foods that you should stick to meats, vegetables, seafood, and fish.
The Type of Heat to Use
Want to know the best way to cook up your favorite dish on the grill to perfection? It all depends on the recipe that you use. Compared to smoking and other cooking methods, grilling is usually going to be a faster way of cooking. However, there are still two types of heat options you need to know about when you’re grilling.
Direct Heat
Direct heat means that the grates are above the fire, which is typically used when cooking things like fish, veggies, seafood, and meats that are thinner cut.
Indirect Heat
Indirect heat is food that is cooked by the heat source and not directly above the flame. The fire is usually set on one side of the grill grate to medium or medium-low, and the food is cooked on the opposite side. This is best for things like thick cuts of meat that need a long and slow heat to cook.

Grilling Beef

Beef Internal Temperatures
Whether you’re grilling a steak or you have a roast in the oven, these are the levels of doneness for beef, and the internal temperature required for each.

- Medium Rare – 135°F
- Medium – 145°F
- Medium Well – 150°F
- Well Done – 160°F
Poultry Internal Temperatures
When it comes to cooking poultry to a safe internal temperature, things are much simpler! According to the USDA, all poultry must be cooked to 165°F.
It doesn’t matter if you’re cooking a whole chicken, turkey legs, or chicken breast. Aim for 165°F internal temperature and your chicken will be tender and delicious!
Pork, Veal, And Lamb Internal Temperatures

Internal meat temperature matters because there can be bacteria that are in the meat. Cooking the meat to a certain temperature is basically heating the meat to where it’s safe to consume.
This all just depends on the thickness of what you’re cooking and the type of food that you’re cooking, too. Thin cuts of meat are going to cook up much faster on the grill and take way less time than other cooking methods.
Depending on what you’re trying to cook, the temperatures will vary. You’ll find recipes that call for a grilling temp as low as 250 degrees and some that go upwards of 450 degrees.
Most people see them as the same, but there is a difference. Typically when you’re grilling food, you’re right there with the food, and the lid of the grill is up as you’re actively cooking. Most times when people are BBQing, the lid is down, and they come back often to open the cover and check on the meat or food that is cooking inside.
