This Slow Cooker Clam Chowder combines tender potatoes, chopped and minced clams, crispy bacon, celery, onion, and garlic in a rich and creamy broth. Made easily in the crockpot, this hearty homemade clam chowder is perfect for a comforting family dinner.

Ingredients 

  • 8 slices bacon chopped
  • 1 tablespoon reserved bacon grease or butter
  • 4 large Idaho potatoes peeled and cubed
  • 1 medium onion chopped
  • 3 celery stalks chopped
  • 3 cloves garlic minced
  • 13 ounces chopped clams drained
  • 13 ounces minced clams drained
  • 8 ounces clam juice optional
  • 1 cup chicken broth or water
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon dried parsley
  • ½ teaspoon dried thyme
  • 4 cups half-and-half
  • 1 tablespoon cornstarch
  • Chopped fresh parsley for garnish

Instructions

  • Heat a large skillet over medium-high heat. Add the chopped bacon and cook until browned and crispy.
  • Remove the bacon from the skillet. Reserve half of the crispy bacon for garnishing the finished chowder and refrigerate it until needed.
  • Reserve 1 tablespoon of the bacon grease. If you prefer not to use bacon grease, substitute 1 tablespoon butter.
  • Add the cubed potatoes, remaining cooked bacon, reserved bacon grease, onion, celery, garlic, chopped clams, minced clams, clam juice, and chicken broth to the slow cooker.
  • Add the salt, black pepper, dried parsley, and dried thyme. Stir until everything is evenly combined.
  • Cover the slow cooker with the lid.
  • Cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours, until the potatoes are fork-tender.
  • Thicken the chowder. During the final 30 minutes of cooking, add the half-and-half and cornstarch to a mixing bowl.
  • Whisk thoroughly until the cornstarch is completely dissolved and no lumps remain.
  • Pour the half-and-half mixture into the slow cooker and stir until combined.
  • Turn the slow cooker to HIGH, if it is not already on HIGH. Cover and cook for another 30 minutes, or until the clam chowder has thickened.
  • Taste and adjust the salt and black pepper as needed.
  • Reheat the reserved bacon until crispy, if needed.
  • Ladle the chowder into bowls and garnish with chopped fresh parsley and reserved crispy bacon. Serve warm.
