What Is Stroganoff?
Stroganoff is a Russian dish traditionally made with beef and mushrooms in a sour cream-based sauce. This turkey version puts a modern spin on the classic, making it lighter while keeping all the creamy, savory flavors of the original.
Recipe Ingredients
Ingredient Notes:
- Leftover turkey – Makes great use of holiday leftovers, providing lean protein and great flavor.
- Baby bella mushrooms – Add earthy flavor and meaty texture. Fresh mushrooms work best.
- Butter – Creates a rich base for sautéing vegetables and builds flavor.
- Onion and garlic – Provide aromatic foundation for the sauce.
- All-purpose flour – Helps thicken the sauce to the perfect consistency.
- Chicken broth – Adds depth of flavor and creates sauce base.
- Cream of chicken soup – Provides creaminess and seasoning.
- Worcestershire sauce – Adds savory umami flavor.
- Dijon mustard – Brings tanginess and depth.
- Seasonings – Garlic powder and paprika enhance the overall flavor.
- Sour cream – Creates the signature stroganoff creaminess.
- Egg noodles – Traditional pasta choice that holds the sauce perfectly.

Storing Tips

Recipe FAQs
Yes! Turkey tenderloins or breast meat work great. Cook them first, then proceed with the recipe.
This usually happens if sour cream is added while the sauce is too hot. Always remove from heat and let cool slightly before stirring in sour cream.
Create a cornstarch slurry with 1 tablespoon each of cornstarch and cold water, then stir into the simmering sauce.
While possible, cream-based sauces can separate when frozen. If freezing, store sauce separately from noodles and reheat gently.
Use cream of mushroom soup, or make a homemade version with heavy cream and extra seasonings.
