This recipe really is simple to make, but putting a little bit of care into how you prepare it makes a huge difference. Specifically, you’re going to take a few minutes to make blackberry basil simple syrup from scratch!

Making simple syrup might sound complicated, but it actually is simple! (Did you catch that pun?)

You’ll add the blackberries, basil, honey, and water to a small saucepan set over medium heat and simmer until it thickens. Make sure to press down a bit on the blackberries to release all of those delicious fruit juices! 

After that, you’ll just strain the syrup through a fine mesh strainer and let it cool. 

To assemble the drinks, divide the Elderflower liqueur among four champagne flutes, along with a drizzle of the blackberry simple syrup. Top off each glass with some chilled Prosecco. Garnish each glass with a few fresh blackberries and a sprig of fresh basil before serving.

Sparkling Summer Blackberry Basil Cocktail

Ingredients 

  • 8 large fresh or frozen blackberries
  • 3 T fresh basil torn
  • ¼ cup (84 ¾ g) honey preferably local
  • ¼ cup (59 ⅐ g) water
  • 4 oz (113 ⅖ g) Elderflower liqueur optional
  • 1 ml (1 ml) bottle Mionetto Brut Prosecco 750 chilled
  • Garnish: optional
  • blackberries
  • basil

Instructions

  • Add the blackberries, basil, honey, and water to a small saucepan set over medium heat.
  • Simmer, stirring occasionally, until the mixture is heated through and starts to thicken approximately 4-5 minutes.
  • Gently press on blackberries while heating to release juices.
  • Remove from heat and strain mixture through a fine-mesh strainer to remove solids. Reserve remaining liquid and set aside to cool.
  • If using, divide the Elderflower liqueur among four champagne flutes, along with a drizzle of the blackberry simple syrup. Finish by topping off each glass with some chilled Prosecco.
  • Garnish each glass with 2-3 fresh blackberries and a sprig of fresh basil, if desired, before serving.
