Ingredients 

  • 3 cups jasmine rice cooked and chilled, use 1 cup raw rice to make 3 cups cooked
  • 2 tablespoons olive oil
  • 2 cups pineapple chunks fresh if possible
  • 1 teaspoon sesame oil
  • ½ red bell pepper seeded and diced
  • ½ teaspoon ground ginger
  • 1 cup frozen peas and carrots mix
  • 1 pound boneless skinless chicken breasts diced
  • 1 small onion diced
  • 3 cloves garlic minced
  • 3 green onions sliced
  • 2 eggs lightly beaten
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons teriyaki sauce
  • salt and black pepper to taste

Instructions
