Diced Tomatoes – You will use a can of diced tomatoes with the juice.
Bell Pepper – Green bell peppers work great for this recipe, as it gives it that traditional Spanish rice flavor.

Onion – I reached for red onion for the recipe. But feel free to swap it with a yellow or white onion.
Rice – White rice is what I used for this recipe. Now make sure it is not instant rice.

- Add all the ingredients into the slow cooker. Mix well to combine.
- Turn the crockpot to low and cook for 6-8 hours with the lid on.
- It is good to stir the rice mixture a few times during the cook time.

You can store any of your rice in an airtight container in the fridge for up to 3-4 days. Just reheat the leftover rice in the microwave or even on the stove. Add a little water or broth to the rice as you reheat on the stove, or it will dry out the rice, and it can become crunchy rice if it dries out too much.
