Crockpot Spanish Rice is a Mexican rice that is seasoned with tomato sauce, green peppers, onions, and more all in one delicious side dish recipe. This is an easy recipe that makes for a perfect side dish to pair with your dinner. Slow cooker Spanish rice is a great taco Tuesday dish.

This easy Spanish rice recipe is one that I like to make, and the entire family loves it. Or if you want a potluck side dish for a large group, this is a really good rice dish to take and dish up.

Serve your rice with enchiladas, rolled tacos, or other Mexican cuisines. It makes the perfect side, that has that Tex Mex flavor.

Ingredients Needed

Diced Tomatoes – You will use a can of diced tomatoes with the juice.

Bell Pepper – Green bell peppers work great for this recipe, as it gives it that traditional Spanish rice flavor.

Chicken Stock – You can use bone broth for more added nutrients if you would like.

Onion – I reached for red onion for the recipe. But feel free to swap it with a yellow or white onion.

Rice – White rice is what I used for this recipe. Now make sure it is not instant rice.

Chili Powder – The chili powder is going to add a rice richness to the rice.

Worcestershire sauce – This sauce is going to add some depth to the rice.

What to serve with Spanish Rice

Most of the time, you can serve Mexican food with this rice. Or you can add some cooked diced chicken breasts and make it into a full meal like this slow cooker Mexican shredded chicken. You could even do ground beef or sausage for a main dish option.

  1. Add all the ingredients into the slow cooker. Mix well to combine. (Photos 1 & 2)
  2. Turn the crockpot to low and cook for 6-8 hours with the lid on.
  3. It is good to stir the rice mixture a few times during the cook time. (Photo 3)
  4. Serve and enjoy. (Photo 4)

Storing Leftovers

You can store any of your rice in an airtight container in the fridge for up to 3-4 days. Just reheat the leftover rice in the microwave or even on the stove. Add a little water or broth to the rice as you reheat on the stove, or it will dry out the rice, and it can become crunchy rice if it dries out too much.

Freezing rice will make it pretty soggy once it thaws from being frozen. It is recommended to not freeze the rice.

  • You can swap the green pepper with other types of peppers like red, orange or yellow.
  • Add 1/2 a teaspoon of olive oil to the slow cooker.
  • Top with cheddar cheese and serve up a cheesy rice.
  • Add in 1/2 cup of black beans for added protein. Just drain and rinse beans.
  • Use a tablespoon of taco seasoning for more flavor.

FAQs

Can you cook rice in the slow cooker?

You can cook rice in the slow cooker. As you will see in this recipe, it just needs to be rice that is regular like a long grain white rice. You will find instant rice will become mushy and break apart.

Can I add meat to the recipe?

Yes, you can add in cooked ground beef or diced up raw chicken. The chicken will cook with the rice, and it can be a meal in one.

Crockpot Spanish Rice is an easy crockpot rice recipe to make for dinner. This is a seasoned rice with bell peppers, onion, rice and more. A simple side dish rice made right in the slow cooker.

Ingredients 

  • 1 28 oz (822 ⅐ g) can diced tomatoes
  • 2 green bell peppers chopped
  • 1 cup (235 g) chicken broth
  • 1 8 oz (255 ⅐ g) can tomato sauce
  • 2 small red onions chopped
  • 1 cup (185 g) rice not instant
  • 2 ½ teaspoons chili powder
  • 2 teaspoons worcestershire sauce

Instructions

  • Mix all ingredients together in slow cooker until well combined
  • Cook on low 6-8 hours, stirring occasionally
  • Serve & enjoy!

Notes

Rice – Long grain white rice is a great rice to use. Make sure to not use instant rice. 
Storing – Store leftovers in an airtight container for up to four days in the fridge. Reheat in the microwave or in a skillet. If it seems a bit dry add a splash of broth when reheating. 
Protein – Feel free to cook up ground beef or add in diced or shredded pre-cooked chicken to make it a meal in one. 
Onion – You can use a yellow or white onion as well if you don’t have red.
