Homemade Tzatziki Sauce for Greek Chicken Kabobs

No Greek chicken kabobs with tzatziki sauce are complete without a cool, creamy tzatziki. This classic Greek sauce is incredibly easy to make and takes these kabobs from good to restaurant-quality in just minutes.

To make homemade tzatziki sauce, combine 1 cup plain Greek yogurt with 1/2 cup grated cucumber (squeeze out excess moisture first), 2 cloves minced garlic, 1 tablespoon fresh dill, 1 tablespoon lemon juice, and a pinch of salt. Mix everything together and refrigerate for at least 30 minutes before serving to let the flavors meld together.

The key to perfect tzatziki is removing the moisture from the cucumber. After grating, place the cucumber in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. This prevents the sauce from becoming watery and keeps it thick and creamy.

Tzatziki sauce pairs perfectly with these air fryer Greek chicken kabobs because the cool, tangy flavor balances the warm spices in the marinade. You can also use it as a spread for pita bread, a dip for vegetables, or a topping for gyros and other Mediterranean dishes.

Air Fryer Vegetable Kabobs (Vegetarian Option)

Want to make vegetarian kabobs? This recipe works perfectly for air fryer vegetable kabobs using the same delicious Greek marinade. The vegetables get beautifully caramelized on the outside while staying tender inside.

For vegetable-only kabobs, use a mix of zucchini, cherry tomatoes, yellow squash, and eggplant along with the bell peppers, mushrooms, and onions from the original recipe. Cut all vegetables into 1-inch pieces for even cooking. Thread the vegetables onto skewers, alternating colors and textures to make them visually appealing.

Cook air fryer vegetable kabobs at 400°F for 12-13 minutes instead of the full 15 minutes, flipping halfway through. Vegetables cook slightly faster than chicken, so check them at the 12-minute mark to prevent overcooking. The bell peppers should be tender with slightly charred edges, and the mushrooms will release their moisture and become golden brown.

To prevent vegetables from sliding off the skewers, pierce through the center of each piece rather than the edge. You can also alternate between softer vegetables like mushrooms and firmer ones like bell peppers for better stability. If you’re making vegetable skewers in the air fryer alongside chicken kabobs, cook them on separate trays since they have different cooking times.

Storing Greek Chicken Kabobs

  • Storage: These air fryer Greek chicken kabobs are perfect for meal prep and leftovers. The marinade helps keep the chicken moist even when reheated.
  • Refrigerator: Store leftover Greek chicken kabobs in an airtight container for 3-4 days. You can keep them on the skewers or remove the chicken and vegetables and store them together. The flavors actually get better as they sit in the fridge.
  • Freezing: Freeze cooked kabobs for up to 3 months. Remove them from the skewers before freezing and place the chicken and vegetables in a freezer-safe container with parchment paper between layers. Thaw overnight in the refrigerator before reheating.
  • Reheating: Reheat in the air fryer at 350°F for 5-7 minutes until warmed through, or microwave for 1-2 minutes. The air fryer will help restore some of the crispy exterior. You can also enjoy these kabobs cold in salads or wraps.

Serving Suggestions

These air fryer Greek chicken kabobs with veggies make a complete meal on their own, but there are plenty of ways to round out your dinner. Serve them over Crockpot Spanish Rice for a filling Mediterranean-inspired bowl, or alongside Air Fryer Roasted Potatoes for a classic pairing.

For a lighter meal, serve the chicken kabobs with a crisp Greek salad and warm pita bread. The tzatziki sauce doubles as a salad dressing when thinned with a little lemon juice. You can also remove the chicken and vegetables from the skewers and stuff them into pita pockets with lettuce, tomatoes, and extra tzatziki for an easy lunch.

If you’re hosting a Mediterranean dinner party, pair these kabobs with Lemon Garlic Jumbo Shrimp for a surf-and-turf spread. Add some hummus, olives, and feta cheese on the side, and you’ll have an impressive feast. Recipe FAQs

How to cook vegetable kabobs in air fryer?

To cook vegetable kabobs in the air fryer, cut vegetables into 1-inch pieces for even cooking. Thread onto skewers, brush with olive oil and seasonings, then cook at 400°F for 12-13 minutes, flipping halfway through. Vegetables like bell peppers, zucchini, mushrooms, and onions work perfectly. For mixed chicken and vegetable kabobs, follow the same 15-minute cooking time as the main recipe since the chicken needs the full time to cook through.

What’s the difference between chicken skewers and chicken kabobs in the air fryer?

Chicken skewers and chicken kabobs are the same thing—both refer to pieces of chicken threaded onto sticks and cooked. “Kabob” (also spelled kebab) comes from Middle Eastern cuisine, while “skewer” is the more general English term. When making them in the air fryer, the cooking method is identical regardless of what you call them. These Greek chicken kabobs use the traditional Middle Eastern preparation method with Mediterranean seasonings.

Can I make air fryer chicken kabobs with veggies all together?

Yes, you can absolutely make air fryer chicken kabobs with veggies on the same skewers. The key is cutting everything into similar-sized 1-inch pieces so they cook evenly. Bell peppers, mushrooms, and onions work best because they have similar cooking times to chicken. Avoid delicate vegetables like zucchini or tomatoes on the same skewer as chicken, as they’ll overcook before the chicken is done. For best results, alternate one piece of chicken with one piece of vegetable for balanced kabobs.
