I love Brookies! If you haven’t had one yet, they are great. You have a brownie batter and a chocolate chip cookie batter that you pair together to make one cookie. So each bite is like eating a brownie and cookie at the same time.

Ingredients You Will Need

Here is all you need for this chocolate chip and brownie cookie recipe.

  • Granulated Sugar
  • Brown Sugar
  • Vanilla
  • Eggs
  • Flour
  • Baking Soda
  • Baking Powder
  • Salt
  • Chocolate Chips
  • Cocoa Powder
  • Cornstarch
  • Butter

How to Make Brookies Cookies

Step One: First, start by working on your chocolate chip cookie batter. Add dry ingredients into a bowl and set aside.

Step Two: Then in a mixer add your butter, both sugars, egg, and vanilla. Mix until combined.

Step Three: Next add in the dry ingredients and mix until formed. Then fold in the chocolate chip cookies. Place cookie batter in fridge in a covered dish.

Step Four: Now for the brownie batter you will do the same. Put dry ingredients in a different bowl.

Step Five: Next with a stand mixer beat the butter, sugar, and cocoa powder, then add in one egg at a time. (Photos 1 & 2)

Step Six: Add in the dry ingredients mixing well and scraping sides. Fold in the chocolate chips at the end. Place dough in the fridge for 15 minutes. (Photo 3)

Step Seven: Use an ice cream scoop and scoop out a little of each cookie dough and brownie. Roll together, and place on baking sheet.

Step Eight: Lastly add extra chocolate chips and bake as directed.

Storing Cookies

This easy cookie recipe is great for cookie swaps and even bake sales. If you want to make a few batches, simply allow cookies to cool and store in an airtight container. Just make sure the cookies are fully cooled before placing in a container to prevent condensation building in container.

Room Temperature – These cookies can be stored at room temperature. Brookies are best eaten within the first 2 days of being made but can store for up to a week.

Freezer – You can also freeze any of these chocolate chip brownie cookies for 3-4 months. Just place in a freezer bag or container and freeze. Then thaw at room temperature when you want to eat.

Helpful Tips For Making Cookies

  • Make sure you chill the dough. This step allows you to shape the cookie dough into a bowl. But also it helps make the cookies not flatten too much in the oven.
  • Watch the cookies, and use the cook time as a guide. Some ovens will cook the cookies faster. If you overbake the cookies will dry out and be crunchy.
  • You are welcome to use store bought cookie dough if you want to skip some prep work.
  • Sprinkle the cookies with some sea salt flakes to help bring out more sweetness from the chocolate.

Brookie cookies are a brownie and chocolate chip cookie in one. Give this easy brookies recipe a try for a tasty dessert to serve up!

Ingredients 

Chocolate Chip Cookie Ingredients:

  • 1 Cup (227 g) butter unsalted sweet cream softened
  • 1 Cup (200 g) sugar
  • 1 Cup (220 g) brown sugar light
  • 2 tsp vanilla extract pure
  • 2 eggs large
  • 3 Cups (375 g) flour All purpose
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp kosher salt
  • 1 ½ Cups (354 ⅞ g) chocolate chips

Brownie Ingredients:

  • 1 ¾ Cups (218 ¾ g) flour All purpose
  • ½ Cup (43 g) cocoa powder Hershey dark
  • 1 tsp baking powder
  • 1 tsp cornstarch
  • ½ tsp kosher salt
  • ½ Cup (113 ½ g) butter unsalted sweet cream melted
  • 1 tsp pure vanilla extract
  • 2 eggs large
  • ¾ Cup (165 g) brown sugar light
  • ¼ Cup (50 g) sugar

Instructions

Chocolate Chip Cookie Directions:

  • Using a medium bowl whisk the flour, baking soda, baking powder, and salt until combined
  • Using a standing mixer, beat the butter, sugar, brown sugar, eggs, and vanilla until combined
  • Gradually mix in the dry ingredients into the wet until combined
  • Fold in the chocolate chips
  • Cover and place into the fridge while you make the brownie batter

Fudge Brownie Directions:

  • Using another medium bowl, whisk the flour, cornstarch, baking powder and salt
  • Using a standing mixer, beat the melted butter, sugar and cocoa powder until combined
  • Beat in the eggs until combined
  • Gradually beat in the dry ingredients until combined and a dough forms
  • Mix in 3⁄4 Cup semi sweet chocolate chips
  • Place dough into the fridge for 15 minutes
  • Preheat oven and line two cookie sheets with parchment paper or a silicone mat
  • Remove both dough from the fridge. Using small ice cream scooper, scoop out a small amount
  • of both dough into your hand
  • Roll the doughs into 1 ball of yummy goodness
  • Place onto the cookie sheet and press down lightly to create a thick disk
  • Repeat steps until both dough is used
  • Sprinkle the remaining chocolate chips on top
  • Bake in the oven for 12-15 minutes or until a light golden brown
  • Allow to cool before enjoying!

Notes

Refrigerate cookie dough mix and brownie mix for at least 15 minutes each
