Halloween is the perfect time to get creative in the kitchen, and these Jack-o-Lanterns cupcakes make for a great start!
There’s just something about this spooky holiday that inspires us to whip up some awesome treats for our family and friends! Unfortunately, it’s not a holiday that we tend to take a lot of time off for, which really cuts down on the amount of time we are able to spend coming up with creepy goodies.
So, this year I am sharing a few easy Halloween treat recipes, that are super simple, and don’t require you to spend days prepping. Like my quick Halloween marshmallows, pretzels, ghost cupcakes, bat snack cakes, and of course this Jack-O-Lantern cupcake recipe that only requires three ingredients – all of which you can find at your local grocery store or craft store.
To make this gourd-inspired cupcake all you need is cake mix, orange frosting, and black decorating gel. This recipe will take you just 5 minutes of prep (an hour for cooling) and 15-20 minutes to decorate depending on how elaborate you make your jack-o-lanterns. It’s a fun family project for kids of all ages and they can be made last minute with no stress!

While jack-o-lanterns are pretty much a staple of Halloween nowadays, they actually have a pretty interesting history!
The term itself dates back to around the 1700s and refers to Irish folklore. The story goes that a man named Stingy Jack tricked the devil into climbing an apple tree with him so he could pick some apples. When the devil climbed up, Jack quickly carved a cross in the trunk of the tree, trapping him. Jack made the devil promise not to take his soul once he died, and the devil agreed.
After Jack passed away, God decided not to allow him into heaven because of how awful a person he was on Earth; however, he also wasn’t allowed in hell either due to the deal the devil had made. So instead, he was sent off into the darkness with burning coals to light his way. Jack placed the coals inside turnips and used them as lanterns – which is how they started being known as jack-o-lanterns. In the early 20th century, Irish immigrants brought these tales to America and started using pumpkins instead of turnips.
The scary faces that are carved into jack-o-lanterns are meant to scare away spirits that may be wandering in the “in-between” on Halloween night. And, that my friends are the origin of the Halloween jack-o-lanterns we see each and every year!

To give your cupcakes a spooky feel go for chocolate cake mix. If you don’t have any chocolate cake mix on hand or have an anti-chocolate resident in your house then you can use white or yellow cake mix. You can add a few drops of black food coloring to make it more festive. If you can’t find black food coloring you can make your own with any box of food dye. Then you’ll just need orange frosting which you can make from scratch or buy premade at the store and some decorating gel food dye.
