Why This Easy Caramel Sauce Recipe Works

  • Quick and easy to prepare: You don’t need a candy thermometer or any special equipment to make this 6-ingredient caramel sauce. And it only takes 10 minutes too!
  • Smooth texture: Corn syrup lowers the chance of crystals forming in the sauce.
  • Adjustable thickness: A shorter simmer makes a pourable sauce. An extra minute or two makes a thick caramel sauce for spooning. You can choose how thick or thin you want your sauce.

Easy Recipe for Caramel Sauce Ingredients

See the recipe card below for the full list of ingredients and exact measurements.

Ingredients for caramel sauce: butter, heavy cream, vanilla, corn syrup, salt, brown sugar.
  • Heavy cream: This loosens the brown sugar and butter into a pourable sauce.
  • Light brown sugar: Sweetens the sauce and gives the sauce its brown sugar base. Pack it into the cup so the amount is right.
  • Corn syrup: Helps reduce crystallization, which means less chance of gritty caramel.
  • Salted butter: Room temperature butter melts faster into the cream and sugar.
  • Salt: Just a little pinch for that salted caramel flavor.
  • Vanilla extract: An optional ingredient you can stir in off the heat for a vanilla-caramel flavor. If using, I recommend pure vanilla extract rather than the synthetic kind.

Substitutions and Variations

  • Use unsalted butter: Add a pinch of salt if you want salted caramel.
  • Try dark brown sugar: Dark brown sugar gives the sauce a stronger molasses note.
  • Use golden syrup: Golden syrup can be used in place of corn syrup, though it will change the flavor and color.
  • Make it thicker: Simmer a little longer while stirring often.
  • Make it thinner: Add 1 to 2 tablespoons of heavy cream after cooking, and stir until smooth.

Tips for Making Easy Caramel Sauce

  • Use room temperature butter: Cold butter takes longer to melt and can leave the mixture uneven at the start.
  • Pack the brown sugar: Loose brown sugar can make the sauce thinner than expected, so scoop it into a measuring cup and level it off with a knife.
  • Use the spoon test: Pull the pan off the heat when the caramel coats the back of a spoon. My first batch came out too thick because the sauce firmed up more in the refrigerator.
  • Thin it off heat: Stir in a little cream after the pan is off the burner if the sauce is thicker than you want.

Common Mistakes to Avoid When Making Easy Caramel Sauce

  • Using high heat: Brown sugar can scorch before the sauce is smooth.
  • Walking away from the pan: Sugar can settle on the bottom, so the sauce needs regular stirring.
  • Judging it while hot: Hot caramel sauce is thinner than cold caramel sauce.
  • Skipping the corn syrup: Leaving it out can make the sauce more likely to become grainy.

How to Store

  • Refrigerator: Store leftover caramel sauce in an airtight container in the refrigerator for up to 1 week.
  • Freezing: Freeze in a freezer-safe container for up to 3 months. I recommend leaving space at the top for expansion.
  • Reheating: Warm in the microwave in short intervals or heat gently on the stovetop until pourable.

Frequently Asked Questions

Yes. Use the spoon-coating test to check the thickness.

Why did my caramel sauce come out grainy?

This homemade caramel sauce is quick to make in one pan and thickens as it cools. Spoon it warm over ice cream, brownies, cheesecake or apple desserts, or chill it for later.

Ingredients

Instructions

  • Add all the ingredients (except vanilla if using) to a saucepan.
  • Place the pan on a medium-low heat and let the butter melt and the sugar dissolve, stirring often.
  • Cook for 6 to 8 minutes, stirring often, until the sauce is well combined and smooth.
  • Continue to simmer until it’s as thick as you want it.
  • When the caramel sauce coats the back of a spoon, it’s ready. Don’t forget it will thicken a little more as it cools.
  • Take the pan off the heat, stir in the vanilla if using, and let the sauce cool for 5 to 10 minutes before serving.
  • You can either serve it warm or let it cool to room temperature before refrigerating.

Notes

  • Cool before sealing: Let the sauce cool for a few minutes before adding the lid, since trapped steam can water down the sauce.
  • Reheat in short bursts: Microwave briefly and stir between bursts to avoid hot spots.
  • Use a wide-mouth jar: Cold caramel is thicker, so a wider jar makes it easier to scoop.
