How to Make Easy Mexican Casserole
- Preheat oven to 350 degrees
- Cook ground meat, drain (Photo 1)
- Stir in salsa and cook for about 15-20 minutes (Photos 2 & 3)
- Add in beans and cook until hot; turn off heat (Photo 4)
- Prepare a 13×9 baking dish with nonstick spray
- Evenly layer in crushed tortilla chips (Photo 5)
- Spoon meat mixture over chips (Photo 6)
- Spread on the sour cream (Photo 7)
- Sprinkle on olives, green onion, tomatoes (Photo 8)
- Cover with cheese (Photo 9)
- Bake 30-35 minutes until bubbly (Photo 10)
Storage
Refrigerate leftover casserole for 3-4 days. Carefully wrap the leftovers in plastic wrap or foil, or Place them in an airtight container.· Casseroles are usually a nice meal to prepare ahead of time! - 1 can chili beans drained
- 3 cups (345 g) tortilla chips crushed
- 2 cups (460 g) sour cream
- 1 – 2 oz (28 ⅓ g) black olives sliced – optional
- ½ cup (50 g) green onion chopped
- ½ cup (74 ½ g) tomato chopped
- 2 cups (224 g) cheddar or mexican blend cheese
Instructions
- Preheat oven to 350 °F (177 °C) degrees
- Cook ground meat, drain1 lb ground beef or turkey
- Stir in salsa and cook for about 15-20 minutes2 cups salsa
- Add in beans and cook until hot, turn off heat1 can chili beans
- Prepare a 13×9 baking dish with nonstick spray
- Evenly layer in crushed tortilla chips3 cups tortilla chips
- Spoon meat mixture over chips
- Spread on the sour cream2 cups sour cream
