  2. Cook ground meat, drain (Photo 1)
  3. Stir in salsa and cook for about 15-20 minutes (Photos 2 & 3)
  4. Add in beans and cook until hot; turn off heat (Photo 4)

  2. Evenly layer in crushed tortilla chips (Photo 5)

Storage

Refrigerate leftover casserole for 3-4 days. Carefully wrap the leftovers in plastic wrap or foil, or Place them in an airtight container.·  Casseroles are usually a nice meal to prepare ahead of time! Make the casserole as recommended, but instead of baking it, wrap it in foil and freeze it. When you’re ready to bake it, take the casserole out of the freezer the day before you want to eat it, and let it thaw overnight in the refrigerator before baking as indicated in the recipe instructions.

This easy Mexican casserole is made with crunchy tortilla chips and is perfect for busy week nights! It only takes a few ingredients and can be made with ground beef or turkey!

Ingredients 

  • 1 lb (453 ⅗ g) ground beef or turkey
  • 2 cups (520 g) salsa
  • 1 can chili beans drained
  • 3 cups (345 g) tortilla chips crushed
  • 2 cups (460 g) sour cream
  • 1 – 2 oz (28 ⅓ g) black olives sliced – optional
  • ½ cup (50 g) green onion chopped
  • ½ cup (74 ½ g) tomato chopped
  • 2 cups (224 g) cheddar or mexican blend cheese

Instructions

  • Preheat oven to 350 °F (177 °C) degrees
  • Cook ground meat, drain
    1 lb ground beef or turkey
  • Stir in salsa and cook for about 15-20 minutes
    2 cups salsa
  • Add in beans and cook until hot, turn off heat
    1 can chili beans
  • Prepare a 13×9 baking dish with nonstick spray
  • Evenly layer in crushed tortilla chips
    3 cups tortilla chips
