  • colby jack cheese
  • green chili enchilada sauce 
  • sour cream
  • corn tortillas 
  • can green chilis

How To Make A Green Chile Chicken Enchilada Casserole

  1. Preheat oven to 350 degrees 
  2. In a large bowl mix chicken, 1 cup of cheese, green chilis, and salt & pepper until well combined. (Photo 1)
  3. Warm enchilada sauce in a small skillet 
  4. Dip tortillas in sauce (Photo 2)
  5. Add chicken mix to middle of tortilla (Photo 3)
  6. Spread sour cream over chicken mixture (Photo 4)

  1. Roll stuffed tortilla seam down and place in an 8×8 pan prepared with nonstick spray (Photo 5)
  2. Continue the process until pan is full 
  3. Pour remaining sauce over the top (Photo 6)
  4. Sprinkle on remaining cheese (Photo 7)
  5. Bake for 20 minutes until bubbly and golden on top (Photo 8)

You can, in fact, use beef in this recipe. Instead of chicken, use 1 pound of lean ground beef. Brown the meat and onions in a large skillet over medium-high heat. Drain off any fat. Toss it together with the rest of the ingredients in a large mixing bowl. Then, follow the instructions in this recipe and you’ll have Green Chile Beef Enchilada Casserole. Do you do not like ground beef, shredded pork, and cut-up steak are great substitutes as well.

Can I use flour tortillas instead of corn for enchiladas?

Flour tortillas can certainly be used in this recipe. You’ll want to get the smaller, taco-sized flour tortillas or they will be too large to fit in the 8×8 baking dish. If all they have are the large burrito size you can cut them in half.

  • 19 oz (538 ⅔ g) green chili enchilada sauce
  • 1 cup (230 g) sour cream
  • 6-8 corn tortillas
  • 4.5 oz (127 4/7 g) can green chilis
  • Salt & pepper
