On hot summer days, I really enjoy drinking 7up. It’s the perfect soda to quench my thirst under the sweltering heat of the summer months. Not only that, I can make a tasty sweet treat with this soda as well, lemonlime soda cupcakes. If you’re a regular around here you are aware of my love for soda-enhanced cupcakes! I’ve got a killer chocolate Dr. Pepper cupcake recipe and an orange soda one in the works!

These Lemonlime soda cupcakes are made with 7up and are a fantastic addition to my little mini-series! The combination of lemon and lime juices, together with the soda, results in a sweet but refreshing treat. When the citrus zest is combined with 7up’s crisp, clean flavor, you get a cupcake that is unlike any other!

Ingredients for 7up Soda Cupcakes.

Cupcake Ingredients:

  • white cake mix
  • lemon lime soda
  • vegetable oil
  • large egg whites
  • Green and yellow cupcake liners

Frosting Ingredients

  • salted butter
  • lemon jello   
  • lime jello   
  • powdered sugar    
  • half and half  
  • Green and yellow gel food coloring

How To Make Lemon Lime 7up Soda Cupcakes

Directions for Cupcakes:

Preheat oven to 350 degrees. Spray or line a standard muffin tin.

  • Step 1: Add cake mix to a large mixing bowl. Using a hand or stand mixer, mix in your lemon lime soda, oil, and eggs on medium until well incorporated. (Photo 1)
  • Steps 2-3: Add batter into the muffin tin until each is about 2/3 full. Bake for 18-20 minutes or until a toothpick comes out clean. Allow cooling completely before frosting. (Photo 2) 

Directions for Frosting:

  • Step 4: In a large mixing bowl or stand mixer, cream the butter, and beat until light and fluffy, about 2 minutes. (Photo 3)
  • Steps 5-6: Slowly mix in the powdered sugar, 1 cup at a time, while adding in half and half or milk, a bit at a time, in between each cup. Continue to mix for 1 minute or until creamy. (Photo 4)
  • Steps 7-9: Evenly separate the frosting into 2 mixing bowls. In one bow, add the lemon jello and yellow food coloring. In the other bow, add the lime jello and green food coloring. Start with 1-2 drops of food coloring and continue with 1 drop until desired color is achieved. (Photo 5)
  • Step 10: Fill one of the small piping bags with the yellow frosting and the other smaller piping bag with the green frosting. (Photo 6)
  • Steps 11-12: Slip the two smaller piping bags into the larger piping bag that has the piping tip. Squeeze out a bit of the frosting until it begins to swirl. Frost your cupcakes.

There are a variety of foods and beverages that you can serve alongside your 7up cupcakes. The following are some of my personal favorites:

  • I serve these Lemon Lime 7up Soda Cupcakes as dessert during backyard barbecues with juicy burgers and corn ribs.
  • When I’m by myself and want to relax with a book, I’ll have a 7up cupcake and a cup of hot lemon tea. They soothe and calm my soul after a long, exhausting day.
  • For a refreshing afternoon treat, I just pair these cupcakes with a glass of ice-cold 7up with slices of lemon and lime.

Lemon Lime 7up Soda Cupcakes FAQs

Can I substitute Sprite for 7UP?

You can as it has the same base flavor profile but, be aware that 7UP has a higher amount of carbonation than Sprite, which does impact the texture of the cake.

Do I need to use milk or water in the cupcake batter?

Nope! The 7UP acts as a replacement for the water and the milk in the cupcake batter. It provides all the moisture the cupcakes need!

Is it necessary to fill the cupcake liners all the way to the top?

Filling the cupcake liners too much will result in the batter overflowing the liners. Fill them only about two-thirds of the way. Pro tip — I like to portion the batter with an ice cream scoop to ensure that the lemon lime 7up cupcakes are all the same size.

How can I tell whether the cupcakes are done?

Use a toothpick to test whether the 7up cupcakes are done. They need extra time if the toothpick comes out with wet batter. They’re done if it comes out with a few crumbs sticking to it.
