What’s in This Roasted Garlic Aioli Recipe?

  • Whole Garlic Bulbs: Fresh garlic bulbs are the star of this easy recipe, providing a rich and aromatic flavor. Roasting them mellows their pungency and enhances their natural sweetness, making the aioli incredibly delicious.
  • Avocado Oil: This oil is known for its light, buttery taste and high smoke point, which makes it perfect for roasting garlic. Rich in heart-healthy fats and vitamins, avocado oil adds a creamy texture to the aioli, contributing to its luxurious mouthfeel.
  • Salt and Pepper: These essential seasonings elevate the aioli’s flavor profile. Salt enhances the sweetness of the roasted garlic flavor, while freshly ground black pepper adds a subtle kick, balancing the overall taste.
  • Mayonnaise: Mayonnaise provides a creamy consistency and a mild tang, acting as the base for the aioli. Using high-quality, egg-based mayonnaise can add an additional depth of flavor while allowing the garlic taste to take center stage. Homemade mayo adds a bit of an extra homemade touch.
  • Lemon Juice: Freshly squeezed lemon juice brings brightness and acidity to this flavorful dip, cutting through the richness of the other ingredients. This ingredient not only adds a refreshing zing but also helps to preserve the aioli’s vibrant color.
  • Spicy Brown Mustard: This ingredient introduces a nuanced heat and depth to the dip, enhancing the flavor while complementing the garlic. The tanginess of mustard plays well with the creamy elements, creating a well-rounded dip that is both zesty and rich.

Substitutions and Additions

  • Garlic Alternatives: If you prefer a milder flavor, use roasted shallots instead of garlic. For a different twist, try using fresh herbs like basil or cilantro to add a unique taste to this easy garlic aioli sauce.
  • Oils: While avocado oil is a fantastic choice, you can also use olive oil for a more traditional flavor. Alternatively, for a nutty twist, consider sesame oil in moderation.
  • Vegan Option: To make this aioli vegan, substitute mayonnaise with a plant-based version or prepare a homemade cashew cream for a creamy base.
  • Additional Kick: For those who enjoy some heat, add a dash of cayenne pepper or a splash of hot sauce to spice things up. A pinch of smoked paprika can also introduce a lovely smoky flavor.
  • Herbs and Spices: To enhance the flavour further, mix in fresh herbs (such as dill or parsley) or spices (like smoked paprika or cumin). These can deepen the complexity of the dip.
  • Cheesy Twist: If you want a cheesy flavor, incorporate some grated Parmesan or nutritional yeast, which works well for a vegan version, offering a slightly cheesy taste without dairy.

Recipe Tips

  • Fresh Ingredients: Always use fresh garlic and high-quality mayonnaise for the best flavor and texture.
  • Adjusting Consistency: If your aioli is too thick, add a small amount of water or extra lemon juice until it reaches the desired consistency.
  • Garlic Roasting Time: Watch the garlic while roasting. If it starts to brown too quickly, lower the oven temperature to ensure it cooks evenly without burning.
  • Taste As You Go: Taste the aioli as you mix in the ingredients to find the perfect balance of flavor; adjust salt, pepper, and lemon juice according to your preference.
  • Chill Before Serving: For optimal taste, refrigerate the aioli for at least 30 minutes before serving to allow the flavors to meld.
  • Experiment with Flavours: Don’t hesitate to get creative with different herbs and spices to personalize your aioli; adding fresh herbs can provide a refreshing twist.

Storing Tips

Store your roasted garlic aioli fresh and delicious in an airtight container in the refrigerator. Properly stored, it can last for up to one week. If you want to extend its shelf life, consider portioning the aioli into smaller containers; this way, you can take out only what you need without exposing the entire batch to air and bacteria.

For longer storage, you can freeze the aioli in ice cube trays, allowing you to use only the amount required while preserving the rest for future use. Just be sure to thaw it in the refrigerator before serving, as the texture may change slightly once frozen. Always give it a good stir before using to revive its creamy consistency.

Recipe FAQs

Can I make roasted garlic aioli without mayonnaise?

You can substitute mayonnaise with a plant-based alternative or prepare a cashew cream for a creamy base. This will keep the aioli vegan and still delicious.

How can I adjust the flavor if the aioli is too garlicky?

If the garlic flavor is too strong, try adding more mayonnaise or lemon juice to balance it out. You can also mix in additional herbs or spices to mellow the garlic intensity.

Is it safe to consume raw eggs in traditional aioli?

Traditional aioli recipes often use raw eggs, which can carry a risk of salmonella. If you’re concerned, opt for store-bought mayonnaise, which is pasteurized, or use an egg substitute.

What other variations can I try with this simple recipe?

You can experiment by incorporating sun-dried tomatoes, roasted red peppers, or different spices to create unique variations of your roasted garlic aioli.
